Recently I heard of chocolate and zucchini cake, which piqued my interest right up until I heard about chocolate and beetroot cake!
I made some chocolate and Guiness cupcakes not too long ago and they were super rich and delicious so I’m looking forward to trying this! I’m researching recipes at the moment. I’ve found quite a few different variations; gluten and lactose free, vegan, with a dash of rum and pecans/macadamias, with delicious frosting, using tinned beets (most of the others use fresh), meringue cake, and the list goes on.

A wonderful friend has planted the idea in my head to try some baking with green tea powder. I should be able to get some matcha (green tea) powder at my local Asian supermarket, though I think it’s a little pricey so I’ll see how I go. I’ve had a bit of a Google Blogs search and have some up with these potential recipes:

Made these a little while ago from this recipe. The Guiness makes the cupcakes deliciously rich and dense, almost like a brownie! Great recipe. The only problem was I had almost double the icing I needed left over from what this recipe recommended. So I was…forced… to make some spiced pumpkin cupcakes using this recipe to go with the spare icing.
